When I think of a good meal for a cold day, I think of a warm bowl of chili with my favorite toppings. This week the weather here in Louisiana has been ridiculously cold. In snowed in some parts and where we live we got lots of ice and our city was shut down.
Since it’s been really cold outside and we can’t leave the house, I made one of our winter favorites: Easy Slow Cooker Chili. This chili has so much flavor, it’s hearty, the perfect comfort food and a meal that my family loves.

I love cooking this chili in the slow cooker because it’s easy to make and the slow cooker does most of the work.

Slow Cooker Chili
Ingredients
- 3 tablespoons vegetable oil
- 2 yellow onions diced
- 1 red bell pepper diced
- 6 garlic cloves chopped
- 1/4 cup chili powder
- 1 tablespoon ground cumin
- 2 pounds ground beef
- 1 1/2 teaspoons salt
- 1 (28-ounce) can diced tomatoes
- 1 (14-ounce) can tomato sauce
- 2 (15-ounce) cans kidney beans, drained and rinsed
- 1 small can green chiles drained
Directions
- Heat the oil in a large frying pan over medium heat and add the onions and bell pepper. Season with salt and cook until softened.
- Add the garlic, chili powder, and cumin, stir and cook for 1 minute. Add the ground beef and salt and cook until the beef is no longer pink.
- Transfer the mixture to the slow cooker, add the diced tomatoes, tomato sauce & beans and stir to combine. Cover and cook until the chili thickens- about 8 hours on low or 6 hours on high.
- Stir in the green chiles. Taste and season with salt. Serve with cheese, red onion, and sour cream.
